Super Quick Easy and delicious pasta recipe 😋 With spinach and sundried tomatoes 🍅

Cook the pasta according to the package instructions until al dente.

Reserve 1/2 cup of pasta water before draining.

In a large pan, heat 2 tbsp of butter and 2 tbsp of olive oil over medium heat.

Add the chopped onion and minced garlic. Sauté for around 2 minutes until fragrant and the onions are translucent.

Stir in 1 tsp of tomato puree, 1 tsp of mixed herbs, 1/2 tsp of salt, and 1/2 tsp of chili flakes.

Cook for 1-2 minutes, allowing the flavors to meld together.

Pour in 270ml of cream and add the reserved 1/2 cup of pasta water.

Cook the mixture for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.

Add the chopped sundried tomatoes and a handful of fresh spinach to the pan.

Mix well until the spinach wilts.

Add the cooked pasta to the pan.

Sprinkle 4 tbsp of grated Parmesan cheese over the top and mix everything together until the pasta is well coated with the creamy sauce.

Serve immediately, garnished with extra Parmesan cheese and fresh herbs if desired.
