The addition of almond and matcha reflects a modern twist, merging traditional French techniques with Japanese flavors. Today, these croissants are enjoyed in cafes around the world, appealing to those seeking unique and gourmet pastries.
Make simple syrup by combining 50 g of caster sugar and 50 mL of water in a saucepan over medium heat.
Bring the mixture to a boil and let it boil for 3 minutes, then remove from heat and let cool.
Preheat the oven to 180° C.
In a bowl, combine 150 g of softened unsalted butter, 50 g of caster sugar, and a pinch of salt.
Sift in 1 tablespoon of matcha and stir until smooth.
Add 2 eggs one at a time, mixing well after each addition.
Add a few drops of almond extract and mix well.
Stir in 200 g of ground almonds until combined, reserving about 4 tablespoons of the mixture for topping later.
Take the ready-made croissants and slice them open, leaving a hinge.
Dip the croissants in the cooled simple syrup, ensuring both sides are coated, especially the edges.
Divide the frangipane filling into quarters and dollop it inside each croissant, smoothing it down.
Spread the reserved frangipane on top of each croissant and sprinkle with sliced almonds.
Bake the croissants in the preheated oven for about 15 minutes until golden brown.
Let the croissants cool for about 10 minutes after baking.
In a bowl, mix 2 tablespoons of icing sugar with 1 teaspoon of matcha, gradually adding water until you reach a drizzly but thick consistency.
Drizzle the icing over the cooled croissants.
