Welcome to Todd's Kitchen. Today, I'm showing you how to make Chipotle.

Chipotle is smoked and dried jalapenos. There are green and red jalapenos; red ones are sweeter and hotter.

Wear gloves when handling jalapenos to avoid discomfort from the oils.

Cut off the top and split the jalapenos down the center, then remove all the seeds.

Place the deseeded jalapenos on a wire rack, cut side down, for easy transport to the smoker.

Use a smoker with apple wood for flavor; hickory or oak can also be used.

Smoke the jalapenos for about 12 hours until they have a nice dark smoke color.

After 12 hours, check the jalapenos; they should be shriveled and dry. If not, you can smoke them longer.

To dehydrate further, transfer the jalapenos to a food dehydrator for about 8 hours until they are crunchy.

Once dried, store the whole jalapenos in an airtight container to keep them crunchy.
