For Electric Pressure Cooker: Start the sauté mode, add oil. Add chopped onions, garlic and cook for 3-4 minutes. Add chopped Serrano or jalapeño pepper. Cancel the sauté mode. Add the cumin powder, Mexican oregano, black beans, water, chipotle powder, salt to taste. Close the lid and cook on high pressure for 20 minutes (35 minutes for unsoaked beans). Let the pressure release naturally.

If you need to adjust the consistency, cook on sauté mode for additional 3-4 minutes. Add fresh cilantro and lime/lemon juice. Chipotle black beans are ready to serve!

For Stovetop Pressure Cooker: Heat a stovetop pressure cooker, add oil. Add chopped onions, garlic and cook for 3-4 minutes. Add chopped Serrano or jalapeño pepper. Add the cumin powder, Mexican oregano, black beans, 4 cups of water, chipotle powder, salt to taste. Close the lid and cook on medium-high pressure for 5 whistles or 15 minutes. Turn the heat to simmer and cook for 20-25 minutes. Turn off the heat. Let the pressure release naturally. Add fresh cilantro and lime/lemon juice. Chipotle black beans are ready to serve!
