Season the vacío with Chilean salt on both sides and let it rest for 10 minutes.
Preheat the grill to high heat.
Place the vacío on the grill and let it cook undisturbed for 25 minutes.
Add two halved onions and two tomatoes to the side of the grill and let them cook for 9 minutes and 58 seconds.
Flip the vacío and let it cook for another 9 minutes and 59 seconds.
In a bowl, combine the tomatoes, onions, garlic, lemon juice, a drizzle of olive oil, salt, and black pepper to make a salsa inspired by pebre.
Process the salsa until smooth.
Flip the vacío again and let it cook undisturbed for another 25 minutes.
Remove the vacío from the grill and let it rest for 5 minutes before slicing.
