Remove the core from the cabbage by cutting into it with a knife and pulling out the thick part.
Boil water with a bit of salt, add the cabbage, cover, and cook for about 2-3 minutes until it softens slightly.
Soak 400g of dry buckwheat in cold water for a few hours until it swells.
Peel and grate 4 potatoes.
In a large bowl, combine the soaked buckwheat with the grated potatoes.
Finely chop the onion and garlic, then sauté the onion in a bit of olive oil until golden.
Add 2 minced garlic cloves to the sautéed onion for flavor.
Chop dried plums and dried mushrooms, then add them to the buckwheat mixture along with the sautéed onion.
Add 1 tablespoon of dried bread (breadcrumbs) to the filling for contrast.
Chop about 30-40g of parsley and add it to the filling, then season with salt and pepper.
Take cabbage leaves and fill them with the mixture, folding the sides in and rolling tightly to form cabbage rolls.
Prepare the sauce by heating olive oil in a pan, adding finely chopped onion and grated carrot, and sautéing for about 5 minutes.
Add a bit of butter to the sautéed onion and carrot mixture, then season with salt and pepper.
Once the onion and carrot are well cooked, add minced garlic, tomato paste, and mushroom broth to the pan.
Cook the sauce for about 10-15 minutes until it reduces slightly, then add 1 teaspoon of dried marjoram and 1 teaspoon of honey to balance the flavors.
Pour the sauce over the cabbage rolls in the baking dish, ensuring they are completely covered.
Preheat the oven to 180°C (350°F) and bake the cabbage rolls for about 50-60 minutes.
If the rolls start to burn during baking, cover them with aluminum foil.
