Jamaican Chicken Curry has its roots in the island's rich culinary history, influenced by African, Indian, and British flavors. This dish is a staple in Jamaican households, often served during family gatherings and celebrations. The use of aromatic spices and coconut milk creates a vibrant, flavorful dish that reflects the island's tropical climate. Today, variations can be found globally, with many adapting the recipe to suit local tastes while preserving its essence.

Wash the chicken and chop it into small pieces, totaling 3 kilos.
Season the chicken with all-purpose seasoning, chicken seasoning, everyday seasoning, garlic powder, and 3 tablespoons of Better Pack curry powder.
Add chopped garlic, chopped bell peppers (green, red, yellow), chopped white onion, fresh thyme, and half a scotch bonnet pepper (optional) to the chicken.
Crush a few pimento berries and add them to the mixture.
Grate a thumb-sized piece of ginger and add it to the chicken mixture.
Rub the seasonings into the chicken thoroughly.
Heat oil in a pan and add the curry powder, stirring for 30 to 40 seconds to avoid burning.
Add the seasoned chicken to the hot oil and stir well.
Cover the pan and do not add any water; let the chicken cook in its own juices for about 10 minutes.
After 10 minutes, check the chicken; it should have released its own juices.
Remove the scotch bonnet pepper to avoid extra spiciness.
Cover the pan again and let it cook for another 5 to 10 minutes without adding water.
After 5 minutes, check again; the chicken should have created more juice.
Add hot water from the container used to season the meat to the pan, ensuring not to drop the temperature with cold water.
Add more chopped bell peppers (red, yellow, green) and chopped carrots to the pan.
Give the mixture a gentle stir and cover the pan, cooking for a final 15 minutes.
