Making Mushroom Barley Soup

Melt 3 tablespoons of butter in a pot over medium heat.

Chop 1 onion and add it to the pot, sautéing until softened.

Chop 1.5 lbs of cremini mushrooms and add to the pot with 0.25 tsp of salt.

Chop 2 carrots and press 4 cloves of garlic, adding them to the pot after the mushrooms have cooked down.

Add 0.5 tsp of dried thyme and another 0.5 tsp of salt to the pot.

Pour in 9 cups of chicken broth and add 0.5 cup of pearl barley.

Cover and let simmer for about 50 minutes until the barley is tender.

Taste and adjust seasoning with additional salt and black pepper as needed.
