1

In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5 minutes until it becomes frothy.

2

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms. Turn the dough out onto a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.

3

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

4

After the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 8 equal pieces and shape each piece into a ball. Place the dough balls on a baking sheet lined with parchment paper, cover them with a damp cloth, and let them rise for another 30 minutes.

5

Preheat your oven to 375°F (190°C). Brush the tops of the buns with a little olive oil. Bake in the preheated oven for 15-20 minutes, or until the buns are golden brown. Allow the buns to cool slightly before slicing them in half for the pizza bases.

6

Increase the oven temperature to 400°F (200°C).

7

Place the bun halves on a baking sheet, cut side up. Lightly brush the top of each bun with olive oil to help them crisp up in the oven.

8

Spread a spoonful of pizza sauce on each bun half. Distribute the shredded chicken evenly over the sauce. Sprinkle the diced bell peppers, chopped onions, and sliced black olives (if using) over the chicken. Top with shredded mozzarella cheese. Season each bun pizza with dried oregano, dried basil, salt, and pepper to taste.

9

Place the baking sheet in the preheated oven. Bake for 10-15 minutes, or until the cheese is melted and bubbly, and the buns are golden and crispy around the edges.

10

Remove the bun pizzas from the oven. Garnish with fresh basil or parsley if desired. Serve immediately and enjoy your delicious Chicken Bun Pizzas!
