Preheat the oven to 350°F (175°C).
In a mixing bowl, whisk together 8 eggs and 1/2 cup of cream.
Add 1/2 teaspoon of salt and 1/2 teaspoon of black pepper to the egg mixture and mix well.
Fold in 1/4 cup of minced tarragon and 1/4 cup of crumbled feta cheese into the egg mixture and set aside.
In a 12-inch cast iron skillet, melt 2 tablespoons of butter over medium heat.
Add 3 tablespoons of minced shallot to the skillet and cook for 2 minutes.
Add 1 cup of asparagus cut on the bias and stir.
After 2-3 minutes, add 3/4 cup of cubed ham and stir until warmed through.
Add 1 cup of roughly chopped spinach to the skillet and stir until wilted.
Pour the egg mixture into the skillet and shake it to evenly distribute the ingredients.
Use a spatula to pull the edges away from the sides of the skillet after 1-2 minutes to allow raw egg to flow to the edges.
Rotate the skillet 180 degrees on the stovetop to ensure even cooking.
Turn off the heat after about 2 minutes and sprinkle 1/4 cup of feta on top.
Transfer the skillet to the preheated oven and set a timer for 20 minutes.
After 20 minutes, check the frittata for doneness by touching the middle; it should have a firm bounce.
If the center is still eggy, return it to the oven for a few more minutes.
Let the frittata cool for about 5 minutes before slicing or attempting to pop it out of the skillet.
