200 grams plain flour
2 tablespoons smoked paprika
1 tablespoon salt
1 teaspoon black pepper
3 tablespoons mayonnaise
1 teaspoon chili powder
1 teaspoon sugar
vegetable oil
lemon wedges
whitebait (sprats or young herring)

Prepare lemon wedges by cutting the ends off the lemon and slicing into pieces.

In a bowl, combine 3 tablespoons of mayonnaise, 1 teaspoon of chili powder, and 1 teaspoon of sugar.

In a separate bowl, mix 200 grams of plain flour, 2 tablespoons of smoked paprika, 1 tablespoon of salt, and 1 teaspoon of black pepper.

Heat vegetable oil in a pan to around 180 degrees Celsius.

Coat the whitebait in the flour mixture, shaking off excess flour before frying.

Carefully add the whitebait to the hot oil and cook for about 1 minute, turning over halfway through.

Drain the cooked whitebait on paper towels and season with a little salt.

Serve the whitebait with lemon wedges and the spicy mayonnaise.
