1 tablespoon coriander seeds
1 teaspoon cayenne pepper
1 teaspoon chili flakes
1/2 cup all-purpose flour
1/4 cup olive oil
500g whitebait
1/4 cup garlic mayonnaise
2 tablespoons lemon juice
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons tahini

Toast coriander seeds and cayenne pepper in a hot dry pan to release their flavors.

Add chili flakes and grind in a pestle and mortar to make a fine powder.

Combine the ground spices with plain flour, season, and mix well.

Coat the whitebait in the spicy flour mix.
