Whitebait

500g whitebait
1/2 cup all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
1/4 cup vegetable oil
1 lemon (cut into wedges)

Rinse the whitebait under cold water and drain well.

In a bowl, mix the flour, salt, black pepper, and paprika together.

Dredge the whitebait in the flour mixture until well coated.

Heat the vegetable oil in a large frying pan over medium heat.

Once the oil is hot, add the coated whitebait in batches, being careful not to overcrowd the pan.

Fry the whitebait for about 2-3 minutes on each side until golden brown and crispy.

Remove the fried whitebait from the pan and place on paper towels to drain excess oil.

Serve hot with lemon wedges on the side.
