Preheat the oven before starting to dress the chicken.
Butcher the chicken by removing the wings first, cutting through the armpit and popping the joint.
Separate the leg quarter from the breast by following the gap between them and cutting around the bone.
Remove the backbone to save for making chicken stock later.
Split the breasts by cutting down the middle bone and following the breastbone to separate them.
Trim off any gristle from the chicken pieces to make them look nice.
Cut 2 lemons into quarters for seasoning.
Crush garlic cloves instead of mincing them.
Use whole herbs: thyme, sage, and rosemary without chopping them.
Peel shallots and cut them into large chunks.
Cut scallions into large pieces, removing the roots.
Drizzle olive oil over the chicken and vegetables.
Sprinkle bay seasoning, cajun spice blend, and lemon pepper seasoning over the chicken and vegetables.
Add white wine to the mixture.
Mix everything together to ensure the chicken and vegetables are well coated.
Prepare a baking dish and create a bed of vegetables and lemons for the chicken to sit on.
Place the chicken on top of the bed of vegetables and lemons in the baking dish.
Bake the chicken in the oven for 20 to 25 minutes until it has nice color.
Reduce the oven temperature and baste the chicken with its own juices.
Bake for another 15 to 20 minutes after basting.
Baste the chicken one more time before returning it to the oven for another 15 to 20 minutes.
Remove the chicken from the oven once done and place it on a serving platter, being careful with the skin.
Strain the juices and vegetables from the baking dish into a small sauce pot to make a sauce.
