1 onion, finely chopped
2 garlic cloves, crushed
120 grams chorizo, diced
2 x 400 gram cans chopped tomatoes
1 teaspoon caster sugar
600 grams fresh gnocchi
125 grams mozzarella ball, cut into chunks
small bunch of basil, torn
green salad (to serve)

Heat 1 tablespoon of olive oil in a pan on medium heat.

Add 1 finely chopped onion and 2 crushed garlic cloves to the pan.

Cook for 8 to 10 minutes until the onion is soft and starting to brown.

Add 120 grams of diced chorizo to the pan and fry for about 5 minutes.

Add 1 x 400 gram can of chopped tomatoes and 0.5 teaspoons of caster sugar to the pan.

Bring the mixture to a simmer, adding a bit of water if it becomes too thick.

Add 600 grams of fresh gnocchi to the simmering mixture and stir it evenly.

Let the gnocchi simmer for roughly 8 minutes, stirring often to prevent sticking.

Transfer the mixture to a pan with a metal handle.

Stir in half to three-quarters of the 125 grams mozzarella ball, chopped.

Optionally, place the mixture in 6 oven-proof ramekins or leave it in the pan.

Top the mixture with the remaining mozzarella, flattening it out and scattering it on top.

Preheat the grill and place the pan underneath it for roughly 3 minutes until the cheese is melting and slightly golden.
