2 tins of chopped tomatoes

1 teaspoon sugar
fresh basil
rapeseed oil

Chop the onion, garlic, and red pepper.

Heat a little rapeseed oil in a pan.

Fry the onions, garlic, and red pepper until soft, about 7 minutes.

Add the sliced chorizo and chopped bacon to the pan, cooking for another 5 minutes until cooked through.

Stir in the two tins of chopped tomatoes, seasoning with salt, black pepper, and 1 teaspoon of smoked paprika.

Add the dried gnocchi directly into the pan without pre-cooking.

Pour in half a tin of water to help the gnocchi cook and absorb the tomato juice.

Leave the mixture on medium heat to simmer for about 8 to 10 minutes, stirring occasionally.

Optionally, add 1 teaspoon of sugar to cut the acidity of the tomatoes while simmering.

Transfer the gnocchi mixture into a baking dish after 8 minutes.

Mix in one ball of mozzarella (about 120 grams) and a small handful of torn fresh basil into the gnocchi.

Top the dish with the remaining mozzarella and additional fresh basil.
