Simmer for 20 minutes to allow flavors to meld.
Pack bratwurst and vegetables into sterilized jars, leaving 1 inch of headspace.
Pour hot brine over the bratwurst in jars, ensuring they are fully covered.
Seal jars with lids and process in a boiling water bath for 15 minutes.
Remove jars and let cool completely at room temperature.
Check seals and store in a cool, dark place for at least 1 week before consuming.
