Crispy Oven Fried Chicken

2 cups all-purpose flour
2 large eggs
1 cup plain bread crumbs
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1/2 tsp dried thyme
1/2 tsp paprika
1/2 tsp salt
1/2 tsp ground black pepper
8 pieces chicken thighs (bone-in, skin-on)
1 cup water or milk

Wash the chicken thighs and pat them dry with paper towels.

In a bowl, add coarse salt and ground black pepper to the bread crumbs.

In another bowl, add a little bit of salt to the egg and a little bit of water or milk.

In a third bowl, add a bit of salt to the flour and mix it up.

Mix all the seasonings (garlic powder, onion powder, cayenne pepper, dried thyme, paprika, salt) in a bowl.

Rub the seasoning mixture into the chicken on both sides.

Take each piece of chicken and dip it into the flour, shaking off the excess.

Dip the floured chicken into the egg, letting the excess drip off.

Coat the chicken in the breadcrumbs, ensuring it's nicely coated on all sides.

Let the coated chicken rest on a plate for 15 minutes to help the coating stick.

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

Prepare a baking sheet by rubbing a little bit of oil over the area where the chicken will be placed.

Place the baking sheet in the oven for about 5 minutes until it gets nice and hot.

After 5 minutes, carefully remove the hot baking sheet from the oven using oven mitts.

Place the chicken on the hot baking sheet skin side down.

Cook the chicken in the oven for 30 minutes.

After 30 minutes, take the chicken out and turn it over.

Return the chicken to the oven and cook for another 30 minutes.

After a total of 60 minutes, check that the thighs are golden brown and let them rest for at least 5 minutes before cutting into them.
