This dish reflects the resourcefulness of home cooks, transforming simple ingredients into a comforting meal. Today, it's enjoyed across the U.S., often served with mashed potatoes and green beans, embodying the warmth of home-cooked meals.

Crack 2 eggs into a large bowl.
Add buttermilk, salt, and black pepper to the bowl and whisk together for the marinade.
Place cube steaks in a Ziploc bag and pour the buttermilk mixture over them, ensuring they are evenly coated.
Refrigerate the steaks for a minimum of 4 hours, preferably overnight.
In a shallow baking dish, add 2 cups of flour and season with salt, pepper, and onion powder, mixing to combine.
Remove the buttermilk cube steaks from the refrigerator and place them in another shallow baking dish.
Using tongs, take a steak out and lay it in the flour, topping it with more flour, then flipping it to coat both sides.
Dip the steak back into the buttermilk for a second dip, then return it to the flour, pressing the flour into the steak for a double dredge.
Transfer the breaded steaks to a sheet tray fitted with a cooling rack and refrigerate for 30 minutes.
In a deep cast iron pan, fill halfway with cooking oil and heat to 350-375°F.
Gently place the breaded steaks in the hot oil and deep fry in batches for 3-4 minutes on each side until golden and crispy.
Transfer the fried steaks to a sheet tray lined with paper towels to drain excess oil and keep warm.
In another pan, add a couple tablespoons of the hot oil from frying over medium-high heat.
Add the reserved seasoned flour to the pan and whisk to combine, cooking for 3-4 minutes.
Gradually add milk to the flour mixture, whisking between each addition to avoid lumps.
Reduce heat to a simmer and season with more salt and pepper, cooking until the gravy reaches the desired consistency, about 3-4 minutes.
Serve the country fried steak topped with the gravy.
