Cut the beef roast into pieces while it's half frozen for easier slicing.
Pound the meat to tenderize and even out the thickness.
Wash and chop 2 large potatoes, leaving the skin on if desired.
Rinse the chopped potatoes and place them in a pot, covering them with water.
Bring the potatoes to a boil, then reduce to a simmer for 10-15 minutes until tender.
Slice a medium onion for the green beans.
In a skillet, heat bacon fat and add the sliced onion, cooking on medium-low heat.
Add 1 quart of home canned green beans or 2 store-bought cans to the skillet with the onions and season with salt and pepper.
Prepare the breading station with 1/2 cup flour, 1/4 cup panko, and 2 whisked eggs with a little cream.
Season the meat with salt, black pepper, and garlic powder on both sides, adding smoked paprika to one side.
Bread the meat using a wet hand for the egg mixture and a dry hand for the flour mixture.
Preheat the air fryer to 400 degrees and place the breaded steaks in a single layer without crowding.
Cook the steaks in the air fryer for 8 minutes total, flipping halfway through.
For the gravy, use equal parts bacon fat and flour (2 tablespoons each) and cook until bubbly.
Add about 1 cup of milk to the gravy mixture and stir until thickened.
