Preheat the oven to 350°F for a non-stick pan or 325°F for a glass pan.
Spray the non-stick pan with nonstick spray and set aside.
In a bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt until combined.
In a separate bowl, crack 1 large egg at room temperature and add 1 cup of sugar and 1/2 cup of canola oil. Mix until combined, ensuring the sugar is dissolved as much as possible.
Add the dry ingredients to the wet mixture and mix with a rubber spatula until just combined, avoiding overmixing.
Add 2 tablespoons of room temperature soy milk and 1/2 teaspoon of vanilla extract to the mixture and stir until combined.
Mash 3 ripe bananas in a separate bowl and then add to the mixture, stirring until evenly distributed.
Fold in 1/2 cup of chopped walnuts into the batter until evenly mixed.
Pour the batter into the prepared nonstick pan and smooth out the top with a rubber spatula.
Sprinkle 1/3 cup of chopped walnuts on top of the batter before baking.
