1

Heat water in a pot and add a little olive oil.

2

Boil quinoa pasta for 7 minutes at 80 to 90 degrees Celsius until slightly undercooked; the rest will cook through steaming.

3

Drain the pasta and keep the water for later use in curry or soup.

4

For the white sauce, boil cauliflower and soaked almonds and cashews for 3-4 minutes.

5

Drain the cauliflower and let it cool.

6

Remove the skin from the almonds to keep the sauce white.

7

Blend the cauliflower and nuts into a smooth paste, using the boiling water as needed.

8

In a pan, heat a little olive oil and sauté chopped garlic for a few seconds.

9

Add the prepared puree to the pan and cook for 3-5 minutes on low flame, adding water as needed.

10

Season the sauce with salt, white pepper, and oregano, and cook for another 2-3 minutes.

11

In another pan, heat olive oil and optional butter, then add chopped garlic and assorted vegetables (cauliflower, mushrooms, carrots, beans, broccoli) and sauté for 1 minute.

12

Add the boiled quinoa pasta to the sautéed vegetables, along with oregano, salt, black pepper, and chopped parsley.

13

Mix everything well and add the white sauce, tossing to combine.

14

Turn off the heat and start plating, garnishing with more parsley and optional tofu or cheese.
