Cut 500 g chicken breast into decent size chunks.
Add 1 tablespoon soy sauce to the chicken.
Add 1 heaped teaspoon garlic granules to the chicken.
Add 2 heaped tablespoons saté seasoning to the chicken.
Add 2 tablespoons coconut milk to the chicken.
Add 1 tablespoon sweet chili sauce to the chicken.
Coat the chicken with the marinade and refrigerate (can be done the night before).
Wash rice and place it in the Ninja pot.
Add 160 ml coconut milk to the rice.
Make chicken stock using a chicken stock cube and boiling water.
Add 1/4 teaspoon saté seasoning to the rice.
Add 1/2 teaspoon garlic granules to the rice.
Chop broccoli into small pieces and dice the pepper into small pieces.
Prepare saté sauce: weigh out 60 g coconut milk.
Add 30 g peanut butter to the saté sauce.
Add 1/2 tablespoon soy sauce to the saté sauce.
Add 1/2 tablespoon mirin to the saté sauce.
Add 1 teaspoon garlic granules to the saté sauce.
Add 1-2 teaspoons chili paste to the saté sauce based on spice preference.
Add 1/2 teaspoon saté seasoning to the saté sauce.
Mix the saté sauce ingredients together and warm if desired.
Layer the rice mixture in the Ninja pot with the chicken on top.
Spread the vegetables over the chicken.
Close the lid and set Ninja Foodi to bake at 180°C for 30-40 minutes.
Check the dish at 30 minutes for color and doneness.
If needed, cover with foil and continue baking, checking at 40 minutes.
If rice is still undercooked, bake for an additional 5 minutes, checking until done.
Dish up the saté chicken rice bake and drizzle with saté sauce.
Garnish with coriander and crushed peanuts.
