Preheat a large pot on the stove.

Add 1 tablespoon of extra virgin olive oil to the pot.

Add 1 finely diced shallot and sauté until translucent.

Add 1 clove of minced garlic and 1 stalk of finely diced celery; stir to combine.

Add 1/4 teaspoon each of basil, oregano, and thyme; mix well.

Add 4 tablespoons of tomato paste and stir until combined.

Pour in 4 cups of vegetable stock and 1 can of diced tomatoes with juice; stir well.

Cover the pot and let the soup simmer to combine flavors.
