Heat olive oil in a large pot until hot.
Add ginger, garlic, and jalapeno; sauté for about half a minute.
Add diced onions and sauté for about 1 minute without browning.
Add chopped tomatoes and sauté for about 2 minutes to release sweetness.
Add finely chopped celery and carrots; sauté for about 1 minute.
Pour in 32 ounces (4 cups) of vegan broth and the same amount of water; simmer for about 10 minutes until boiling.
Add alphabet pasta and let it come to a boil until cooked.
