1

Cut 500 grams of chicken into small pieces.

2

Chop bell peppers and onion into squares (optional).

3

In a bowl, mix chicken with 1/2 tablespoon ginger-garlic paste, 2 tablespoons white vinegar, 2 tablespoons yogurt, 1 1/2 teaspoons tikka masala, 1/2 teaspoon red chili powder, 1/2 teaspoon roasted cumin powder, 1/2 teaspoon crushed red chilies, 1 teaspoon salt, and 1 teaspoon black pepper.

4

Let the chicken marinate for a while.

5

Prepare the red sauce by blending 1 large tomato, 2 green chilies, 2-3 cloves of garlic, 1/2 lemon, 1/4 teaspoon red chili powder, and salt to taste until smooth.

6

Transfer the red sauce to a jar for later use.

7

Prepare the white sauce by mixing 1/2 cup yogurt, 1/2 cup mayonnaise, 3-4 crushed garlic cloves, 1 teaspoon black pepper, 1 teaspoon sugar, and 1 tablespoon lemon juice. Mix well and transfer to a squeeze bottle.

8

Heat 2-3 tablespoons of oil in a pan, add cumin seeds, red chili, and chopped garlic, and sauté until fragrant.

9

Add 2 cups of soaked and washed basmati rice, 1/4 teaspoon garam masala, 1/2 teaspoon salt, and chicken broth (or water) until it covers the rice by 1 inch.

10

Bring to a boil, then reduce heat to low and cover. Cook for about 10 minutes until the rice is fluffy and cooked through.

11

In a separate frying pan, heat 1/4 cup oil and add the marinated chicken. Cook on medium heat to ensure the vegetables retain their crunch.

12

After about 2 minutes, remove the bell peppers and onions from the chicken and set aside.

13

Add a little water to the chicken to create a sauce, cover, and cook on medium-low heat for 3-4 minutes until the chicken is cooked through and the sauce thickens.

14

Check the chicken for doneness, then smoke the chicken for added flavor.

15

Arrange the cooked rice and chicken on a plate, garnish with cucumber, and serve with the prepared sauces.
