Avocado Chocolate Mousse
Cut the avocado lengthwise all the way around with a sharp knife, being careful not to dig into the pit.
Open the avocado by splitting it in half and remove the pit using a spoon.
Scrape away any avocado flesh that has stuck to the pit and put it into a food processor or blender.
Using the same spoon, scrape the remainder of the avocado flesh away from the skin and add it to the food processor.
Add maple syrup or other sweetener, cocoa powder, pure vanilla extract, coconut milk, and cinnamon to the food processor.
Blend until smooth.
Break up the dark chocolate using a sharp knife over a cutting board.
Place a glass bowl over some simmering water, ensuring the water does not touch the bottom of the bowl.
Add the dark chocolate to the glass bowl and stir until well melted.
Quickly move the melted chocolate to the avocado mixture and blend well to combine, scraping the sides of the processor as needed.
Heat 1/4 cup of water in a small saucepan until boiling, then remove from heat and let it rest for about 30 seconds.
Stir in 1 tsp of agar and whisk vigorously to dissolve.
Add the agar mixture to the avocado mousse and blend once more until smooth.
Spoon the mixture into desired containers and chill until set for about 1 to 2 hours.
