Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and sugar.
Cut in unsalted butter until the mixture resembles coarse crumbs.
In a separate bowl, mix buttermilk, vanilla extract, and eggs until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined.
Turn the dough onto a floured surface and knead gently until smooth, about 1-2 minutes.
Roll out the dough to about 1/2 inch thick and cut out bunny shapes using a cookie cutter.
Place the bunny biscuits on the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Remove from the oven and allow to cool on a wire rack.
In a small bowl, mix powdered sugar with milk to create a glaze.
Divide the glaze into separate bowls and add food coloring to each for decorating.
Dip the cooled biscuits in the glaze and decorate with coconut flakes for fur, chocolate chips for eyes, and sprinkles for embellishments.
Allow the decorated biscuits to set before serving.
