Chop the chocolate into smaller pieces to help with processing.

Add the chopped chocolate to a food processor.

Pulse the chocolate until it resembles a fine powder, being cautious not to over-process it into cocoa butter.

Add 1 and 1/4 cups of whole powdered milk to the food processor with the chocolate.

Add 1/2 cup of cocoa powder to the mixture.

Pulse the mixture until well combined.

Pulse the granulated sugar to break it down into finer granules before adding it to the mixture.

Add 1 teaspoon of fine sea salt to the mixture and pulse again to combine everything thoroughly.

Spoon the hot chocolate mixture into a wide mouth quart size jar, leaving some space at the top.

Shake the jar gently to level the mixture and pack it down slightly if desired.

Label the jar with instructions to use 2 to 3 tablespoons of mix per 8 oz of milk.
