Moist Chocolate Mayonnaise Cake

Cultural Context

Chocolate mayonnaise cake originated in the United States during the Great Depression, when resourceful bakers used mayonnaise as a substitute for eggs and oil. This cake is celebrated for its moist texture and rich chocolate flavor, making it a popular choice for birthdays and special occasions. Today, it remains a beloved dessert, often enjoyed with a simple frosting or served alongside a scoop of ice cream.

Servings4
2 cups sifted all-purpose flour
1/2 cup cocoa powder
1/4 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon coffee
1 cup mayonnaise
1 1/4 cups water
1/4 cup warm water
2 teaspoons vanilla
1 cup heavy cream
500 grams dark chocolate
1

Dissolve the coffee in 1/4 cup warm water to release the flavor.

2

Sift together the flour, cocoa powder, baking soda, salt, and baking powder in a bowl.

3

Add the mayonnaise, vanilla, and the dissolved coffee to the dry ingredients.

4

Mix until the mixture is smooth, using a rubber scraper or wooden spoon to remove lumps.

5

Prepare two 8-inch round pans by lining them with parchment paper.

6

Divide the batter evenly between the two pans.

7

Preheat the oven to 350 degrees Fahrenheit.

8

Bake the cakes for 30 to 40 minutes until done.

9

Remove the cakes from the oven and allow them to cool to room temperature.

10

To make the ganache, bring 1 cup of heavy cream to a boil or simmer in a pot.

11

Turn off the heat and add 500 grams of dark chocolate to the cream, stirring until melted.

12

Allow the ganache to cool at room temperature until it reaches spreading consistency.

13

Unmold the cooled cakes and place one layer on a serving plate.

14

Spread a thin layer of ganache on the first layer to help the second layer stick.

15

Place the second layer on top and frost the cake with the ganache in an old-fashioned style, creating swirls.

16

Optionally, decorate the top with grated chocolate.
