Preheat the oven to 375°F (190°C).
Grate the zucchini and place it in a colander to drain excess moisture for about 15 minutes.
Sauté chopped onion in olive oil in a skillet over medium heat until translucent, about 5 minutes.
In a large bowl, mix the drained zucchini, sautéed onion, crumbled feta cheese, cottage cheese, eggs, parsley, black pepper, and salt until well combined.
Lay one sheet of phyllo dough in a greased baking dish, brushing it lightly with olive oil.
Repeat layering with 3 more sheets of phyllo, brushing each with oil.
Spread half of the zucchini mixture over the phyllo layers.
Layer another 4 sheets of phyllo on top, brushing each with oil.
Spread the remaining zucchini mixture on top.
Finish with 4 more sheets of phyllo, brushing each with oil, and tuck the edges in.
Score the top layers of phyllo into squares to help with serving.
Bake in the preheated oven for 30-35 minutes, until golden brown.
Allow to cool slightly before slicing and serving.
