Chop the onions and add them to the ground meat.
Add paprika, ground cumin, salt, and cinnamon to the meat mixture.
If desired, add hot chili pepper for spice and mix with hands.
Prepare the tomatoes by cutting off the tip, halving them, and grating them to create tomato sauce, discarding the skin.
Chop fresh cilantro and parsley (or skip if not using cilantro).
Chop onions for the sauce.
Smash garlic cloves and chop them.
Heat a pan to medium-high and drizzle in olive oil, then add the smashed garlic and chopped onions.
Add the grated tomato sauce to the pan along with the same spices used for the meat.
Cook the tomato sauce until it thickens, adjusting spices to taste.
Form the meat mixture into small balls, about the size of a grape or mini walnut.
Cook the tomato sauce for about 20-30 minutes, stirring occasionally to prevent burning.
Once the sauce is thickened, add the meatballs to the sauce and cover.
Cook the meatballs for about 5 minutes, checking to ensure they do not overcook.
Once the meatballs are cooked, crack eggs directly into the sauce, ensuring the yolks remain intact.
Sprinkle salt and pepper over the eggs and cover the pan.
Cook the eggs for 2 minutes, then check for doneness and cover again for another 2 minutes if needed.
Serve immediately, garnished with fresh cilantro, alongside crusty bread.
