Preheat the oven to 350°F (180°C).
Prepare the vegetables: cut zucchini, carrots, bell peppers, onion, eggplant, and potatoes into bite-sized pieces.
In a large bowl, combine zucchini, carrots, bell peppers, onion, eggplant, potatoes, and tomatoes.
Drizzle olive oil over the vegetables and sprinkle with salt, black pepper, onion powder, garlic powder, cumin, and paprika.
Toss the vegetables until evenly coated with oil and spices.
Spread the vegetables in a single layer on a baking sheet.
Roast the vegetables in the oven for about 40 minutes.
In a separate pot, combine tomato paste, tomatoes, cumin, coriander, paprika, black pepper, turmeric, vegetable bouillon, and water; let it simmer for 5 minutes.
Add the roasted vegetables to the sauce and mix well.
Put it back in the oven for another 15 minutes.
Garnish with fresh coriander before serving.
