Preheat the oven to 400°F (200°C).
Line a large baking sheet with parchment paper or a silicone mat.
Thaw a roll of French puff pastry in the refrigerator for a few days.
Gently unroll the puff pastry and keep it cold until ready to use.
Score the dough into squares with a long knife, then cut into squares using a pastry cutter.
Lift the squares with an offset spatula and transfer them to the baking sheet.
Beat an egg in a measuring cup and brush each square with the beaten egg.
Pierce the dough with a fork to keep it level while baking.
Sprinkle large granulated sugar over the squares.
Bake the puff pastry for 15 to 17 minutes until golden brown.
Let the pastry squares cool on a wire rack.
In a medium saucepan, combine 2 cups of raspberries and 1/4 cup of sugar over medium-high heat.
Simmer the mixture, then reduce heat and cook for 7 to 10 minutes until thickened.
Strain the raspberry sauce through a fine mesh strainer into a glass bowl, leaving behind the seeds.
Let the raspberry sauce cool completely before using.
In a large measuring cup, add 2 packages of mascarpone cheese, 2 teaspoons of vanilla bean paste, a pinch of salt, and 1.5 to 2 cups of confectioners sugar.
Mix on low speed until incorporated.
Measure out 3 cups of chilled heavy cream and add to the mascarpone mixture.
Whisk on low speed until stiff peaks form.
Transfer the whipped cream to a pastry bag with a decorating tip.
Pair puff pastry squares by size for layering.
Pipe a generous amount of mascarpone whipped cream onto a puff pastry square.
Add a layer of mixed fruits on top of the cream.
Drizzle raspberry sauce over the fruit.
