In a bowl, add dark chocolate and unsalted butter.
Place the bowl into the microwave for one minute, taking 30-second breaks to prevent burning.
Once melted, take your ramekins and use a pastry brush to gently wipe down the chocolate around the molds, applying a thin layer.
Place the molds into the freezer for about 5 to 10 minutes.
After the first layer has set, apply a second coating of chocolate using the pastry brush and warm up the leftover chocolate if needed.
Place the molds back into the freezer for about 20 minutes.
To make the cottage cheese filling, add dry cottage cheese, butter, and vanilla extract into a bowl.
Then, add condensed milk and mix everything with a hand blender until smooth. You can also mix by hand with a fork or spoon.
Add more or less condensed milk based on your sweetness preference and the dryness of the cottage cheese.
For a chocolate version, take some of the mixture, add melted chocolate, and mix it in.
Fill the molds with about two tablespoons of the mixture, smoothing out the edges.
Cover the filling with melted chocolate to seal it and place it into the freezer for a few hours.
Once frozen, take them out of the mold and remove any excess chocolate bits.
Store in the fridge for a few days or freeze for several months, wrapping them in cling film.
To serve, add fresh berries, ice cream, or sprinkle with cocoa powder or icing sugar.
