Cacao nibs provide a healthier chocolate flavor.
Mix together 250 g of flour with 1 teaspoon of baking powder.
Cream 150 g of soft butter and 150 g of sugar using an electric mixer.
Add 2 tablespoons of lemon juice and the zest of a whole lemon to the butter and sugar mixture, mixing for a few moments.
Add 4 eggs one by one, mixing well after each addition.
Gradually incorporate the flour mixture while sifting it until fully combined.
Add 3 to 4 tablespoons of milk and mix until the dough has a fluffy texture.
Pour half of the dough into an old aluminum pan, spreading it evenly.
Mix a tablespoon of food coloring into the remaining dough and spread it in the middle, then run a knife in a zigzag pattern for a marbled effect.
Cover with the remaining dough and place the pan on low heat to cook for 35 to 40 minutes.
Check if the cake is ready by inserting a knife in the middle; if it comes out clean, the cake is done.
Prepare icing by mixing 3 to 4 tablespoons of lemon juice with 100 g of icing sugar until fluid.
Pour the icing over the cooled cake and let it set.
