Chuck eye steak offers a similar flavor at a lower price.
Preheat the oven to 200 degrees Celsius for about 10 minutes.
Prepare potato wedges by adding dried oregano and salt to the cut potatoes.
Add fresh rosemary leaves to the potatoes by plucking them off the stem.
Drizzle olive oil over the potatoes and mix with a spatula to coat evenly.
Place the potato wedges in a single layer on a baking tray.
Bake the potato wedges for about 30 minutes.
In a cast iron pan, heat oil over medium heat and add bok choy, stirring with a spatula.
Sprinkle salt and black pepper over the bok choy as it cooks until it wilts down.
Pat the rib eye steak dry with a paper towel to remove excess moisture.
Generously season one side of the steak with salt and black pepper, then flip and season the other side.
Heat oil in the cast iron pan over high heat and add the rib eye steak.
Cook the steak for 3 to 4 minutes on each side, depending on your preference for doneness.
After flipping the steak, add cloves of garlic, fresh rosemary, and butter to the pan.
Baste the steak with the oil, garlic, and rosemary for added flavor as it cooks.
Once cooked, turn off the heat and transfer the steak to a clean plate, wrapping it in clean film to let it rest.
Let the steak rest for a few minutes to allow the flavors to soak in.
