1 lb. sea moss
2 limes
6-8 cups water
1 tin condensed milk
2 tsp. Angostura bitters
sugar to taste
1 pk (250ml) evaporated milk
1 stick of cinnamon

Clean the sea moss before it is soaked. Wash algae thoroughly.

Soak the sea moss with lime juice for 15 mins to eliminate the fresh scent of the sea moss.

Add the clean sea moss and one stick of cinnamon to a pot. Bring pot to boil.

Cover and simmer on low for 20-25 minutes, until algae softens and the water thickens.

Remove from heat and discard the cinnamon stick. Place it in the refrigerator overnight, allowing it to gel.

The following day, combine all ingredients in a blender, adding bitters and sugar to taste.

Mix on low speed until pieces of algae are finely chopped. It's ready!

Serve chilled, or over ice.
