Today, variations of Harissa have gained popularity worldwide, appearing in dishes across Mediterranean and Middle Eastern cooking, celebrated for its depth of flavor and versatility.

Prepare 5 cloves of garlic by crushing and skinning them.
Add garlic to a small food processor.
Use 4-5 fresh red chilies (or soaked dried chilies) in the processor.
Add 250 g of roasted capsicum from a jar to the processor.
Add salt to taste, starting with 1-2 teaspoons.
Add 2 teaspoons of sweet paprika and a bit of olive oil to the mixture.
Peel and chop about 400 g of fresh ginger into smaller pieces for blending.
Blend the mixture until smooth, ensuring a nice color.
Transfer the paste to a saucepan and bring to a gentle boil, stirring regularly.
Add 2 tablespoons of lime juice and 1 teaspoon of smoked paprika to the paste.
Mix in the ground coriander, cumin, fennel, and caraway seeds.
Add extra olive oil to the paste as needed.
Add 1 teaspoon of rose petals and 1.5 tablespoons of rose water to the mixture.
Switch off the stove and let the paste cool.
