1/4 cup of fresh lime juice (or the juice of 2 limes)
1/2 cup of olive oil or vegetable oil
1/4 cup of vinegar (white or apple cider)

Prepare the Vegetables and Herbs: Start by washing and roughly chopping all the vegetables and herbs. Remove the seeds from the bell peppers to reduce bitterness. If you prefer a milder epis, you can remove the seeds from the Scotch bonnet peppers as well.

Blend the Ingredients: Add the chopped vegetables, herbs, and garlic to a blender or food processor. Add the thyme, salt, black pepper, lime juice, oil, and vinegar.

Blend until Smooth: Blend the mixture until it forms a smooth paste. You may need to stop and scrape down the sides of the blender or add a little water to help it blend smoothly.
