Heat a skillet and add 1 teaspoon of oil.
Add 1 pound of mild italian sausage to the skillet and brown it.
Chop 2 cups of diced mushrooms and set aside.
Chop 2 cups of diced zucchini and set aside.
Add the chopped zucchini and mushrooms to the browned sausage in the skillet.
Add 2 teaspoons of minced garlic, 1 teaspoon of onion powder, and 2 teaspoons of homemade italian seasoning to the skillet.
Pour 24 ounces of jarred spaghetti sauce into the skillet and add 1/4 cup of water to the jar to get all the sauce out, then add that to the skillet.
Stir everything together and let it simmer until blended.
Shred 16 ounces of mozzarella cheese while the sauce simmers.
Spray the bottom of a 9 by 13 inch casserole dish with nonstick spray.
Spread about 1 cup of sauce on the bottom of the casserole dish.
Layer half of the 48 ounces of frozen ravioli evenly in the dish.
Add half of the remaining sauce over the ravioli.
Sprinkle half of the shredded mozzarella cheese over the sauce.
Layer the remaining ravioli on top.
Add the remaining sauce to cover the ravioli.
Top with the last bit of mozzarella cheese.
Cover the casserole with aluminum foil.
Bake in the oven at 375 degrees for about 1 hour.
Remove the foil and bake for an additional 15 to 20 minutes until bubbly and slightly browned on top.
Let the casserole sit for about 10 minutes before serving.
(Optional) Broil for a minute to brown the cheese further.
Garnish with freshly chopped parsley and freshly grated parmesan cheese before serving.
