Start by cutting up the mirepoix, which consists of celery, carrots, and onions.
Slice the celery and carrots, and small dice the onions.
Use a garlic presser to prepare the garlic and set aside.
Drizzle olive oil over the boneless skinless chicken thighs and season with garlic powder, poultry seasoning, black pepper, smoked paprika, onion powder, salt, and Trader Joe's elote seasoning. Massage the seasonings into the chicken and set aside.
Heat a pot with olive oil over medium heat and sear the chicken thighs for about 2 to 3 minutes on each side until browned but not fully cooked. Set the chicken aside without cleaning the pot.
Add the small diced onions to the pot and sauté for a few minutes, scraping up the bottom to incorporate the chicken flavors.
Add the carrots and celery to the pot and sauté for about 3 minutes.
Add the minced garlic and sauté for another 2 minutes.
Return the chicken to the pot and pour in the chicken stock. Stir and reduce the heat to medium, covering the pot to cook for about 20 minutes.
After 20 minutes, remove the chicken and shred it by hand using two forks. Alternatively, you can use a stand mixer with a paddle attachment but be cautious not to over-shred.
Skim off some fat from the soup using a spoon, then add back the shredded chicken and diced potatoes.
Season the soup with garlic powder, elote seasoning, chicken bouillon powder, black pepper, onion powder, dried oregano, salt, smoked paprika, and poultry seasoning. Stir and cover the pot, letting it simmer on low for about 20 minutes to develop flavors.
Taste the soup after 20 minutes and adjust seasoning if necessary, adding more salt if needed.
Add the egg to the soup and let it cook for about 5 to 7 minutes until set.
Stir in plant-based heavy cream and chopped parsley, mixing well before serving.
