Choc Banana & Zucchini Muffins

1 cup all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/4 cup brown sugar
1/2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup mashed ripe bananas (about 2 bananas)
1 cup grated zucchini
1/2 cup chopped walnuts (optional)

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

In another bowl, mix the sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.

Add the mashed bananas and grated zucchini to the wet ingredients and stir until mixed.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

If using, fold in the chopped walnuts gently into the batter.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
