Turkey Taco Skillet

1 lb ground turkey
1 cup corn kernels (fresh or frozen)
1 can (15 oz) black beans, drained and rinsed
1 bell pepper, diced
1 can (15 oz) diced tomatoes
1 tbsp taco seasoning

Heat olive oil in a large skillet over medium heat.

Add diced onion and bell pepper, sauté until softened, about 5 minutes.

Stir in minced garlic and cook for an additional minute until fragrant.

Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-10 minutes.

Stir in taco seasoning, salt, and black pepper, mixing well to combine.

Add black beans, diced tomatoes (with juice), and corn to the skillet. Stir to combine and let simmer for 5-7 minutes.
