Start by adding vegetable stock and water into a pot.
Open and rinse 2 cans of jackfruit thoroughly.
Add the rinsed jackfruit to the pot with vegetable stock and water, along with a couple of bay leaves.
Cover and let it boil for about 30 minutes.
In a bowl, combine almond flour, nutritional yeast, smoked paprika, onion powder, garlic powder, and barbecue seasoning, then mix well.
After boiling, remove the jackfruit from the pot and chop it finely, optionally removing large seeds.
Season the chopped jackfruit with barbecue seasoning, onion powder, garlic powder, yellow mustard, liquid smoke, and liquid aminos.
Add the dry mixture to the jackfruit and stir until a doughy texture forms.
Prepare a surface with parchment paper and plastic wrap, then shape the jackfruit mixture into a slab resembling ribs.
Slice the shaped jackfruit into rib-like pieces.
Drizzle olive oil into a pan and pan-fry the slices on both sides until golden brown.
In a bowl, mix Sweet Baby Ray's barbecue sauce with a little butter and agave to create a honey barbecue sauce.
Spread barbecue sauce onto parchment paper on a baking sheet.
Place the jackfruit slices on top of the barbecue sauce and drizzle more sauce over them.
Carefully maneuver the slices to keep their shape, especially since almond flour makes them softer.
Bake in the oven at 400°F for about 30 minutes.
After baking, check the ribs; they should look gooey and sticky.
