Preheat the oven to 400° F (200° C).
Pat the boneless, skinless chicken breasts dry with a paper towel and cut them into uniform 1-inch pieces.
Cut the red and yellow bell peppers into 1-inch chunks and cut the red onion into wedges.
Break the broccoli down into bite-sized florets.
In a large bowl, combine olive oil, juice of one lemon, minced garlic cloves, 1 teaspoon dried oregano, 1 teaspoon dried thyme, a good pinch of salt, and freshly ground black pepper. Optionally, add paprika and red pepper flakes.
Whisk the marinade ingredients together until well combined.
Add the chopped chicken and vegetables to the bowl with the marinade and toss everything together until well coated.
If time allows, let the mixture marinate for 20 to 30 minutes at room temperature; otherwise, proceed to the next step.
Line a large rimmed baking sheet with parchment paper for easy cleanup.
Spread the chicken and vegetable mixture out onto the prepared baking sheet in a single even layer, avoiding overcrowding.
Slide the baking sheet into the oven on the middle rack and roast for about 20 to 25 minutes.
Halfway through cooking (around the 10 or 12 minute mark), take the pan out and stir or flip the ingredients to ensure even cooking.
Return the pan to the oven to finish roasting.
Check for doneness: the chicken should reach an internal temperature of 165° F (70° C) and the vegetables should be tender and slightly charred.
Once done, take the pan out of the oven and let it cool for a minute or two.
Serve directly from the baking sheet, finishing with a squeeze of fresh lemon juice and a sprinkle of fresh parsley.
