1 Celery Stick, Chopped
1/2 Yellow Bell Pepper, Chopped
1/2 Orange Bell Pepper, Chopped
1 Jalapeño, Chopped Small
1 Roma Tomato, Chopped
1/2 Teaspoon Oregano
1/2 Teaspoon Thyme
1 Teaspoon Parsley Flakes
Salt & Pepper to Taste
Dash of Cayenne Pepper
1 Cup Cooked Brown Rice
1 Cup Cooked Black Beans
2 Eggs (optional)

In a large frying pan, heat the oil over medium-high heat.

Add the onion and cook, stirring occasionally, until almost translucent, about 4 minutes.

Add the celery, bell peppers, and jalapeño; cook until tender.

Add the tomato, oregano, thyme, parsley, salt, pepper, and cayenne. Stir to combine.

Add the brown rice and black beans; cook only until heated through.
