1 teaspoon salt
1 tablespoon ginger and garlic paste
juice of 1 lemon
2 teaspoons ground red chillies

1 teaspoon chaat masala
1 teaspoon ground black pepper
1/4 teaspoon garam masala
1 teaspoon coarsely ground cumin powder
1 teaspoon coriander powder
1 tablespoon Kasuri Methi
4 tablespoons thick curd
2-3 green chillies, finely chopped
1 tablespoon soy sauce
1 tablespoon chilli sauce
2 tablespoons gram flour
3 tablespoons cornflour
1/2 teaspoon orange food color
3 tablespoons mayonnaise
2 teaspoons chilli garlic sauce
1 teaspoon hot sauce
1/4 teaspoon crushed red chilli

Soak chicken wings in a mixture of water, white vinegar, and salt for 30 minutes to eliminate foul smell.

After soaking, wash the chicken thoroughly 2-3 times with water and place in a strainer to dry.

Prepare the marinade by mixing ginger and garlic paste, lemon juice, ground red chillies, turmeric powder, chaat masala, black pepper, garam masala, cumin powder, coriander powder, Kasuri Methi, thick curd, chopped green chillies, soy sauce, chilli sauce, gram flour, cornflour, and orange food color.

Coat the chicken wings with the marinade thoroughly and let them rest in the refrigerator for 30 minutes, covered with cling wrap or a plate.

Prepare a sauce by mixing mayonnaise, chilli garlic sauce, hot sauce, and crushed red chilli, and set aside.

Heat oil on medium flame for frying the wings.

Carefully add the marinated wings to the medium hot oil and fry on low-medium flame for 7-8 minutes, avoiding touching them for the first 2 minutes to allow the coating to set.

Stir and flip the wings occasionally to ensure even frying.

After frying, remove the wings with a slotted spoon and let them drain excess oil for 10 minutes.

Reheat the oil to medium hot and fry the wings again for 1 minute to make them extra crispy, then remove immediately.
