Quajado – Potato, Leek and Kale Bake

Add red pepper flakes and oil to a pan.

Cook two large leeks, chopped, and sprinkle with garlic powder.

When the leeks have softened, add 4 cups of kale and cook until wilted. Remove from heat.

Whisk 6 large eggs in a large bowl. Add shredded hash browns, crumbled feta, grated parmesan, salt and pepper.

Mix well and add the leek and kale mixture.

Place in a baking dish with oil and sprinkle with more Parm.

Bake until golden brown.
