Tofu is a plant-based protein, while chicken thighs are often less expensive than breasts.

Start with a cup of rinsed quinoa and a cup of water in the bottom of a hot slow cooker.

Add a couple of frozen chicken breasts and bacon.

Pour in the cream of chicken condensed soup.

Cook on high for a couple of hours.

After about three hours, shred the chicken breasts and add in the broccoli and half of the cheddar cheese.

Stir the shredded chicken back into the mixture and check for liquid, adding another 1/2 cup of water if necessary.

Cook for another 45 minutes until the broccoli is done.

Plate and top with more bacon and cheddar cheese.
